4 Scrumptious Coffee Desserts for Thanksgiving

Coffee lovers get it: there’s no such thing as too much! That’s one reason why coffee desserts have become such a hot ticket for Thanksgiving meals. And since Thanksgiving is almost here, we want to share ways you can infuse your favorite beverages into tasty dessert recipes.

1. Espresso Chocolate Chip Cookies

Every home has its favorite chocolate chip recipe. The best thing about these espresso chocolate chip cookies is that you don’t have to completely reinvent the wheel. Whip up a batch of your tried-and-true cookies, then add 2-3 tablespoons of espresso granules along with the chips. Bake like you normally would and enjoy a little extra pep in your step.

2. Coffee Cream Pumpkin Roll

Pumpkin spice tends to be a show-stealer this time of year, so this coffee cream pumpkin role makes perfect sense. There are two parts to this dessert: the baked role and the whipped cream filling.

To make the pumpkin roll, you’ll need flour, canned pumpkin puree, baking powder, baking soda, eggs, sugar, salt, and seasonal spices. It’ll be best to find your favorite pumpkin roll recipe and reinvent the wheel for the coffee filling.

Coffee Filling Instructions

For the coffee filling, whip 1 ½ cups of whipping cream with half a teaspoon of vanilla, ⅓ cup of powdered sugar, and 2 teaspoons of instant coffee. Fill the roll with the coffee cream, roll, then dust with powdered sugar for garnish.

3. Mocha Truffle Cheesecake

The mocha in this mocha truffle cheesecake is in the crust AND the filling. The entire dessert is made from scratch from start to finish, and it’s worth every bit of the effort.

For the crust, you’ll combine a box of devil’s food cake mix with an egg, ¾ cup of melted butter, and up to three tablespoons of instant coffee granules. Mix together well and press into a pie crust pan, then let it settle before adding the filling.

For the filling, you’ll need two packages of cream cheese, a can of sweetened condensed milk, two cups of melted chocolate chips, instant coffee granules, eggs, hot water, whipping cream, powdered sugar, almond extract, and cocoa.

4. Cappuccino Icebox Cake

This multi-layered cake is reminiscent of the popular coffee dessert tiramisu, but with a twist. For busy bakers in a hurry on Thanksgiving, this simple dessert is quick to make because your freezer does most of the work for you.

Soak graham crackers in cappuccino and milk until it becomes a light, crumbly, pillowy texture. From there, it’s like making a lasagna. Layer the crackers with a delicious creamy filling, then lightly dust the top layer with fine cocoa. The beautiful layers can easily become your dessert table centerpiece.
